NEWSFLASH!!! HOLMESGLEN STUDENT WINS IN VIC TRAINING AWARDS

Greg O’Shea, Cookery Teaching Centre Manager Holmesglen, Colin Wilson and his employer and top chef, Matt Macartney.Holmesglen graduate apprentice, Colin Wilson has won the Victorian Apprentice of the Year Award at the 2011 Victorian Training Awards, held on Friday 2 September at Crown Palladium.

Colin Wilson worked in various jobs and industries for 20 years. He is a qualified fitter and turner and has also studied visual arts at Holmesglen but was still looking for his true calling.

He made the decision to return to study as an apprentice chef. Not an easy decision considering he has a wife and child to consider.

“Colin has wholeheartedly taken the opportunities Holmesglen offers its apprentices. He has maximised the outcome of his course and achieved a great deal from his efforts. The win in the Victorian State Training Award is testament to this and a reflection on the efforts of Holmesglen staff and their commitment to training the industry leaders of tomorrow said,” Greg O’Shea, Hospitality Teaching Centre Manger at Holmesglen.

Colin completed his Certificate III in Commercial Cookery in November 2010 whilst also working as an apprentice chef at the well known Chateau Yering. Executive Chef Mathew Macartney says Colin “is an outstanding apprentice – he has a natural flair for food and a passion to succeed.” This is proven by his long list of awards and achievements.

This passion to succeed has presented Colin with the opportunity to cook with top chefs including Gordon Ramsay, Neil Perry, Tobie Puttock, Inaki Aizitarte, Sat Bains and Matt Moran. In addition, in 2010 Colin was one of four winning apprentice chefs announced in the Restaurant & Catering Victoria 2010 Thierry Marx Career Development Award. As such he travelled to France to realise his dream of working with Michelin Star Chef Thierry Marx at his 18th Century Chateau Cordeillan-Bages in Bordeaux.

In 2011 he was a finalist at the Holmesglen Awards Festival for the Outstanding Apprentice Award category.

“I have always had a passion and interest in food and along with the support of my wife and family I made a significant career change and have dedicated myself cooking – it is my first love and my goal is to one day run my own restaurant” said Colin.

Now that he has completed his apprenticeship, its safe to safe Colin has found his calling. We should all live by his motto “full belly, happy family.”

The 2011 Victorian Training Awards, hosted by Skills Victoria, is the premier event on the TAFE and training calendar.

Now in their 57th year, the Awards recognise excellence and innovation, and celebrate the valuable contribution apprentices, students, teachers, employers, and training providers play in ensuring our state has a strong skills base - now and in the future.
